Seared Salmon with Cucumber Salad

As I have recently been searing ahi and looking for other healthy meal options, I decided to sear some salmon for a change.

For this dinner, I encrusted the salmon with ground up pistachio, almonds, and black sesame seeds and seared it for a nice golden brown tint on the outer salmon. I served this with a cucumber salad much like pickled cucumber salad– I barely had to use any rice vinegar with it, and I used the natural sweetener Truvia in place of sugar to sweeten up the cucumbers.

Time for a Japanese-styled dinner!
